Beef Ragu with Pasta

Pair with:David Hook Old Vines Shiraz

Ingredients

  • 500g beef chuck, cut into chunks
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 2 tbsp tomato paste
  • 1 tin crushed tomatoes
  • 1 cup beef stock
  • Olive oil
  • Salt and pepper
  • 400g pasta
  • Parmesan, to serve

Method

  1. Brown beef in olive oil, then set aside.
  2. Cook onion and garlic until soft.
  3. Add tomato paste, tomatoes and stock.
  4. Return beef to the pot.
  5. Simmer with lid on for 3 hours.
  6. Shred the beef into the sauce.
  7. Cook pasta and mix with ragu.
  8. Serve with parmesan.

Why it works

This Shiraz has more weight and depth. It stands up to the richness of the beef and brings out the flavour in the sauce.

Grilled Lamb Cutlets with Garlic and Rosemary

Pair with:David Hook 2023 Shiraz

Ingredients

  • 8 lamb cutlets
  • 2 cloves garlic, chopped
  • 2 sprigs rosemary, leaves only
  • 2 tbsp olive oil
  • Salt and pepper

Method

  1. Mix garlic, rosemary, olive oil, salt and pepper in a bowl.
  2. Coat the lamb cutlets in the mix and let sit for 30 minutes.
  3. Heat a grill or pan over medium-high heat.
  4. Cook the cutlets for 3 minutes each side.
  5. Rest for 5 minutes before serving.

Why it works

This wine has soft tannins and a touch of spice. It balances the fat in the lamb without overpowering the herbs.
