The grapes were hand picked and whole bunched pressed. The juice was cold settled for 36 hours, racked then cool fermented at 15 degrees Celsius. The wine spent a short time on lees to build complexity before filtering and bottling to retain a fresh crisp citrus style so typical of Belford Semillon.
Harvest date: 3rd Febuary 2016
This wine is now golden in colour, with still bright green tinges. More rounded, toasty aged semillon characters with some aged vanilla in the background. The rich citrus fruit flavours are complimented by a grassy herbaceous lift. The palate is long with a soft lingering after taste and a hint of lemon acid finish
Aged semillon pairs well with flathead, butter poached lobster tail and salmon carpaccio.

When first tasted in Jan 13′ I wrote ‘will develop with sure-footedness’ and gave it 94 points, it’s price $25. Well, I wasn’t wrong: this is now a gloriously elegant and pure Hunter Valley Semillon, with lemon zest and minerally acidity still in full voice, plus a splash of lime. It’s still only a baby with a casual decade in front of it to grow to maturity.
Fish and chips on the beach!
Whether it’s the fish and chips that come wrapped in paper that you can eat whilst burying your feet in the sand, or the kind served plated on a white tablecloth with an ocean view, no summer is complete without at least one round of this great coastal dish.
A young Hunter Valley Semillon is a delightful match for both occasions: zinging with citrus and lively with acidity, it’s like a squeeze of lemon juice with your fish.
The David Hook Old Vines Semillon 2012 brims has crunchy acid with vibrancy, with crisp citrus fruits, lovely acid and generous length.
These wines are the highest quality, often with a distinguished pedigree.
Pale quartz green, a tight and bracing palate, with herb, lemon zest and minerally acidity driving the long lingering finish, leaving the mouth fresh and asking for more.
Will develop with sure footedness.
