The vineyard is located at Orange in the central ranges of N.S.W. At 860 metres the cool climate provides conditions that allow for slow ripening which results in maximum flavour while maintaining acidity. The vines are 33 years old and planted in deep red basaltic soils on sheltered north facing slopes of Mt Canobolas. Yields are low at less than 5 tonnes per hectare.
The grapes were harvested at night and the grapes transported directly to the winery. The grapes were lightly pressed and the juice cold settled for 48 hours. The clear juice was fermented at 12 degrees Celsius for 3 weeks. The wine was stored briefly on lees before bottling.

Harvest date: 21st February 2019.
The wine is bright green in colour with fresh fruity aromas of nashi pear, finger lime and blossom. Vibrant, crunchy fruit mid palate leads to clean fresh acidity and minerality on the finish.
A great fish wine, try it with a mild fish curry or Thai cuisine
